It it's a full restoration, proceed in this order:
1- Take out the interior trim (seats, panels, dashboard, etc.)
2- Strip the mechanical parts (engine, transmission, etc)
3- Now you're left with the body on chassis. If the body is super rusty and chassis needs work, lift the body off the chassis as the last step in stripping.

The best way to do it is completely pull out the interior and the glass and do the body work and paint it then I would do the interior.
Take as much of the interior out as practical including dash and wiring and concentrate on body and chassis.
It usually works out better that way.
